Eggs and brains
1-3-2010It has been known for a long time that egg white is a very nutritious, complete protein source. Recently DSM has discovered that a certain egg white protein is really unique with respect to its amino acid content, particularly when it comes to the essential amino acids Tryptophan and Tyrosin.
These amino acids are used in the body as building blocks for signalling molecules that play an important role in brain processes such as mood, sleep, stress, concentration, alertness and cognition.This prompted us to investigate whether the protein could be developed into a functional food ingredient, improving brain health. Indeed, this seems to be the case!
DSM has found positive effects of the ingredient on:
- mood;
- hand-eye coordination;
- viligence, and
- sleep.
We are now in a last phase of product development where the ingredient is tested in some more human studies to fine-tune its conditions for use. If this turns out positive, the world can expect a new brain health ingredient to come!
